Dessert

Last of the homemade coffee ice cream with FF Redi-wip (3 Pts)


Dinner

4 oz sirloin with grilled onions (6.5 Pts)
1/2 baked potato, bacon crumble, light sour cream (2.5 Pts)
Maple & Orange glazed carrots (1.5 Pts)
Cucumber salad (0 Pts)
Diet Coke (0 Pts)

To make the carrots I sauteed shallots and carrots in 1 Tbsp smart balance 37% light spread, deglazed the pan with a little sherry and let that reduce down. Then I added 1 Tbsp of maple syrup (the good stuff), and about 2 Tbsp of SF orange marmalade to the pan along with a little fat free beef stock. I let this cook down until it had nicely glazed over the carrots. Finally add salt & pepper to taste.


Lunch
