After Dinner (Grey's Anatomy Finale Snack)

Dinner

Homemade Chicken fried rice (8 Pts)

I cooked some chopped onions, garlic, shallots, red & green peppers and ginger in canola oil; then added one lightly beaten egg; some leftover chicken thigh meat, a handful of shredded cabbage and carrots, corn kernels from one ear of corn and a handful of frozen peas; finally I added two cups of leftover white rice and some soy sauce.


Lunch

1/2 dozen shrimp with cocktail sauce (2 Pts)
Bowl Homemade Borscht with dollop light sour cream (2 Pts)
Slice of peasant rye bread (2 Pts)

Ingredients


1 cup(s) onion(s), chopped

1/2 cup(s) cooked carrots, chopped or shredded

1/2 cup(s) green cabbage, shredded

2 cup(s) fat-free beef broth

2 tbsp vinegar, Red wine

1 tbsp McNeil Nutritionals Splenda Brown Sugar Blend

2 tsp black pepper, or to taste

1 tbsp light butter (I use smart balance 50/50 blend)

1 cup(s) beet greens, or whatever comes off your fresh beets

2 cup(s) beets, cleaned, chopped

Instructions

Saute Onions, carrots & beets in butter until onions are translucent (5-8min). Add beef broth, vinegar, sugar, cabbage and beets greens and bring to a boil. Simmer approx. 30mins until beets beets are cooked. Salt and pepper to taste. Serve hot or cold with a dollop of low fat sour cream
